This is a wonderful concoction! It is a snap to make, and tastes just as delicious as it looks! Please make the effort to toast the coconut, it makes a big difference! Directions are included. This can be entirely ready in 15 minutes! This is great because you can serve it chilled, or if you’re pressed for time, you can serve it immediately! Decorate the bowl with cute little parasols!
Tip:
One 6-oz container of Yoplait® Original 99% Fat Free Key lime pie yogurt makes a citrus stand-in for the vanilla yogurt!

this is a tasty, quick vegetarian meal. i often use other spreads in place of pesto- i especially love trader joes eggplant garlic one! any good melting cheese will work but the best i have used are monterey jack, havarti, munster and mozzarella- mild white cheeses seem to be a good fit. — posted by newmama
