Nif’s Lightened Spinach and Artichoke Dip

Yum!!! If you like this kind of dip, you will like the light version of it. Sauteing the garlic and artichokes first adds a really nice flavour. You can eat this cold or heated in the microwave of oven. Enjoy! — posted by Nif

Ramps Fritters

The flavor of ramps is similar to onions, particularly like scallions, but wilder. They can be used just like scallions. In Appalachia, they are so popular that festivals are dedicated to them. They’ve been a staple of Southern Appalachian cooking for generations. Cooking time is approximate — posted by Molly53

Mussels in Guinness & Garlic

This recipe is based on one of the most popular starters at "The Brazen Head" in Dublin, Ireland. This pub is reputed as not only the oldest in Dublin, but also as one of the oldest pubs in all of Ireland…serving patrons for 800 years. "The Brazen Head" is known for providing good food and drink, traditional Irish music, and, of course, lively conversation. Pub grub has always been some of my favorite food. Don’t wait for St. Patrick’s Day to enjoy this wonderful dish!!! — posted by Alan in SW Florida

Another Crab Dip

I got this recipe from my grandma and I have no idea where she got it. It calls for a food processor, but I use a blender and have no problem with the taste. The first time I made it, it turned out a little bit greener than my grandma’s, so my husband used less of the parsley (sorry I don’t know how much he just ‘eyeballed’ it) and it looked more like it, but still tasted great. I posted the recipe as it was given to me, so when you make it, you might want to play around with the amount of parsley you use.

The ‘cooking time’ is the refrigeration time required before serving.

I hope you enjoy. — posted by KimmieCat
