Galletas Elena (Mexican Cookies)
This came from Elena Zelayeta’s Elena’s Secrets of Mexican Cooking. She claims, though, that she is not the Elena of the title, but that this is a popular cookie in Mexico. Kids like the nonpareils — posted by Chocolatl
Chicken Broccoli Dinner in a Tater
Meat, potatoes, vegetables….. All in one scruptious baked potato! A great meal using leftovers too. You can opt to quick-cook the potato in the microwave (without the foil!), but for an extremely moist and creamy potato, follow the instructions and take the long route. Either way it’s a meal fit for a king…. or queen.

Sinfully Rich Fresh Strawberry Ice Cream
When my girls were little, we used to have "Ice Cream Parties" where the two little boys down the street would come over for fresh ice cream. This recipe is full fat…full calories…and tastes ever so good! You need a ice cream machine for this recipe. I used to keep my ice cream canister always in the freezer and have the right amount of strawberries chopped and placed in freezer bags for the winter months… when we wanted to pretend that it was summertime! I would take this strawberry cream mixture to dinner parties and curn up fresh ice cream for dessert…then have everyone moaning in bliss!!! This makes up alot of ice cream, so the whole recipe might not fit in some of the smaller canisters — posted by Abby Girl
Smoked Cheddar Cheese Crisps
Addictive little cheese crisps with a smokey flavor. Increase the amount of cayenne if you like an extra ‘kick"! Great with cocktails or with tomato soup. Originally from a December 1989 issue of Bon Appetit from a "Festive Holiday Menus" section. When preparing the dough for these appetizers, be sure the butter is very soft. — posted by Leslie in Texas
Red-Hot Cajun Blue Cheese Wings
These wings are absolutely delicious! They have just the right amount of spiciness along with the balance of flavor from the blue cheese. This recipe is definitely a winner. Great for parties, Friday or Saturday night dinners or any occasion.
Note: You can substitute for any hot sauce that you like, I love to use Franks red hot sauce. Also, cooking time is not exact, it depends on how your frying and how many wings you do at a time. — posted by AmandaT143
